Vahid's Grain-Free, Dairy-Free Cashew Cream Pasta
- 2 cups cashews (to make Cashew Cream) (Begin preparation of cashew cream 3-4 days in advance. See Instructions, below.)
- 1 package Tolerant Red Lentil Pasta
- 2 Tbsp avocado oil
- 1 onion
- 1 package Aidell's Organic Chicken Sausage
3-4 days in advance of meal preparation:
Soak 2 cups of cashews in just about enough water to cover them (1 inch) for 3-4 days. When through soaking, pour out soaking water. Add 2 fresh cups of water, and blend in blender until creamy.
When ready to prepare meal:
In medium-to-large pan, boil pasta per instructions on package.
Chop onion, and sautée in avocado oil in large frying pan until caramelized (golden brown).
Chop sausage into rounds and then add to onions in frying pan. Brown the sausage on both sides.
Add cooked pasta to ingredients in frying pan, and stir together.
Pour cashew mixture over ingredients in frying pan.
Warm until parboiled, then keep warm about 20 minutes to allow the pasta to cook in the cashew mixture.
Add freshly chopped parsley.
For those who like (and can tolerate) mushrooms, sautéed mushrooms added to the onions and chicken make a nice addition.
